Beat the eggs with half of the salt and a dash of pepper until the eggs are foamy. Heat 2 tbsp of oil in a frying pan. Add the onion and stir fry for 1 minute. Add the garlic and ginger and stir fry for 30 seconds. Add the crab meat and the remaining salt and stir fry for 1 minute. Remove the pan from the heat. Heat the remaining oil in another frying pan. Add the tomatoes and pour in the beaten eggs. Shake and tilt the pan so the egg coats the bottom evenly and does not stick. When the egg begins to coagulate scramble it lightly.
